Recipe for Year-End Celebrations:

Ingredients:

1 caipira pork leg (approximately 3 kg)

Salt and pepper to taste

4 cloves of garlic, minced

Juice of 2 lemons

1 cup of cane molasses

1/2 cup of dry white wine

1/4 cup of mustard

2 tablespoons of Worcestershire sauce

1 sprig of fresh rosemary

1 sprig of fresh thyme

Preparation Method:

1. Make small cuts on the surface of the caipira pork leg to allow the spices to penetrate.

2. Season with salt, pepper, minced garlic, and drizzle with lemon juice.

3. Let marinate in the refrigerator for at least 4 hours, preferably overnight.

4. Preheat the oven to 180°C.

Preparation of the Molasses Sauce:

5. In a bowl, mix the cane molasses, white wine, mustard, and Worcestershire sauce until well combined.

Roasting the Pork Leg:

6. Remove the pork leg from the refrigerator and let it reach room temperature.

7. In a roasting pan, place the pork leg and drizzle with half of the molasses sauce.

8. Add the fresh rosemary and thyme on top of the meat.

9. Cover the roasting pan with aluminum foil and bake for 2 hours.

  1. Finalization:
  2. Remove the aluminum foil and drizzle the pork leg with the remaining molasses sauce.
  3. Roast for an additional hour or until the meat is golden brown and juicy.
  4. Check the internal temperature of the meat, which should reach about 70°C.
  5. Resting and Serving:
  6. Let the pork leg rest for 15 minutes before slicing.
  7. Serve with the reserved molasses sauce, ensuring a juicy and flavorful experience.
    Tip:
  8. Pair the pork leg with roasted potatoes, grilled vegetables, or country rice for a complete meal.
